Roasted Potatoes with Garlic Herb Butter
(Contains: Milk; May be present: Gluten, Eggs, Peanuts, Tree Nuts, Crustaceans, Sesame, Fish, Sulphites, Soy. )
• Trim baby broccoli. Slice lemon • Heat a frying pan over medium-high heat • Cook baby broccoli with a dash of water until tender, 5 mins • Add spinach and a squeeze of lemon juice, stir until wilted • Transfer to a plate
• In a bowl, combine spice blend, chicken and a drizzle of olive oil • Return frying pan to high heat with a drizzle of oil • Cook chicken until cooked through, 3-4 mins each side
• Pierce a few holes in potato packet • Microwave until soft and steaming, 4-5 mins • Plate up greens, potatoes and chicken • Serve with smokey aioli and remaining lemon wedges
