olive oil
• Heat olive oil in a frying pan over high heat • Season beef strips and cook in batches until browned, 1 min • Return all beef to the pan, then add garlic paste and cook until fragrant, 1 min • Remove pan from heat, then add sweet chilli sauce, tossing to combine
• Microwave rice until steaming, 2-3 mins • Crush roasted peanuts in their packet • Add peanuts and rice to a bowl. Season and stir to combine
• Roughly chop cucumber • In a bowl, combine cucumber, slaw mix and ponzu sauce. Season • Plate up rice, slaw and beef • Serve with garlic aioli and crispy shallots. Garnish with torn coriander to serve
