• Boil the kettle • Heat a saucepan over medium-high heat. Half-fill with boiling water • Cook flat noodles until tender, 3-4 mins • In last min of cook time, gently stir noodles with a fork to separate • Drain, rinse and set aside
• Roughly chop Asian greens. Chop carrot into thin rounds. Cut the capsicum into chunks • Heat olive oil in a frying pan over medium-heat. Cook carrot and capsicum, until softened, 4-5 mins • Add Asian greens and cook until just wilted, 1-2 mins. Transfer to a bowl. Set aside • Return pan to high heat. Add beef, garlic paste and ginger lemongrass paste and cook, tossing, until browned, 1-2 mins
Now, slice lemon. Add teriyaki sauce, a splash of water, a generous squeeze of lemon juice, noodles, and Asian veggies to the beef. Toss to combine. Divide between plates and top with crispy shallots.
