We’ve upped our chicken thigh serving size to three! The paprika and oregano-seasoned chicken is roasted alongside a colourful
medley of veggies, then served with fresh parsley and a dollop of creamy garlic dip for an easy, drool-worthy meal.

- Preheat oven to 240°C/220°C fan-forced.
- Cut potato and carrot into bite-sized chunks.
- Slice tomato into thick wedges.
- Slice lemon into wedges.
- Peel garlic cloves.
- In a large baking dish, combine chicken thigh, paprika spice blend, a drizzle of olive oil and a pinch of salt and pepper.
- Add potato, carrot, peeled pumpkin pieces and garlic cloves to the dish, sprinkle over dried oregano (see ingredients) and chicken-style stock powder. Add a generous squeeze of lemon juice and a drizzle of olive oil. Toss to combine.
- Cover tightly with foil and bake for 20 minutes.
TIP: If your baking dish is crowded, divide between two dishes.
- Remove from oven, turn chicken and spoon over any juices.
- Add tomato wedges to the dish.
- Bake, uncovered, until golden brown and cooked through, a further 12-14 minutes.
TIP: Chicken is cooked through when it's no longer pink inside.
TIP: Add a splash of water if the chicken looks dry.
- Divide paprika chicken and lemon veg bake between plates.
- Tear over parsley.
- Serve with a dollop of garlic dip and any remaining lemon wedges. Enjoy!
